Franziska Koch’s potato zucchini pancakes with apple sauce and cinnamon:

These delicious and healthy pancakes are super easy to make. All you need is a bit of patience to cook them, but it will pay off with an amazing taste!

Ingredients (for 2 persons):

  • 2 eggs
  • 580g potatoes
  • 1 big Zucchini
  • 40g GrainLabs Speltmeel
  • 60g Apple sauce
  • Cinnamon

Instructions:

  • Peel the potatoes and shred and mix it together with the zucchini in a big bowl. Add the eggs and the GrainLabs and mix all together. Tip – it’s best to use your hands so that you get a homogeneous mass/mixture.
  • Put one big spoon of the Potato-Zucchini mixture in a hot pan and cook the “Puffer” for around one minute and 30 seconds on each side, so that they get a nice gold-brown colour.
  • Top the Puffer with Applesauce and Cinnamon and enjoy your meal!
  • Tip: If you don’t want to have a “sweet” meal, you can top the “Puffer” with herb quark instead of Applesauce and Cinnamon.
