Food Fridays with Leah Kirchmann | NamedSport Hazelnut and chocolate protein cookies

NamedSport’s hazelnut and chocolate protein cookies recipe:

I got a nice delivery from NamedSport a few weeks ago with lots of goodies and even some recipes to try! I finally got round to making these really tasty hazelnut and chocolate protein cookies. Protein is of course really important for recovery so these are the perfect post-ride or gym session treat. Follow the recipe and try them yourself!

Ingredients:

  • 50g 100% Whey Protein Shake Hazelnut Flavour
  • 36g oat flakes
  • 36g hazelnuts
  • 40g cane sugar
  • 30g egg white (albumen)
  • 60g peanut butter
  • 40g rice milk
  • 40g chocolate “drops”
  • 2g vanilla yeast

Instructions:

  • Blend the oat flakes with the hazelnuts to make a flour, then add the vanilla yeast and the 100% Whey Protein Shake
  • In a separate bowl, mix the peanut butter with brown sugar and once well mixed, add rice milk while continuing to stir well
  • Add the flour mixture and the egg white to the dough, mixing together
  • Add the chocolate drops at the end
  • With the dough made, use a little bit of flour and form a cylinder and then wrap it in baking paper
  • Let the cylinder cool in the freezer for about one hour so that it can then be cut into slices
  • Place the slices, lightly crushing them to give shape, on the baking paper placed on the baking tray. Now they are ready for cooking!
  • Bake at 170° for 10-12 minutes
